From the Los Corrales and Fuente Negra vineyards, located on the southern slopes of the Obarenes Mountains, comes a wine grown in clay-limestone soils, at altitudes between 500 and 700 meters. The vines, oriented north to south, are trellised and dry-farmed, with a dense planting of 3,200 vines per hectare. Grown under an integrated production system, without herbicides or systemic pesticides, they reach ideal ripeness while respecting the environment.
Vineyard care is meticulous: leaf removal, shoot thinning, and grape selection are carried out to ensure optimal sun and wind exposure. The manual harvest with grape selection ensures maximum quality.
Alcoholic fermentation lasts 8 days, followed by a 12-day maceration with skins, under precise temperature control up to 24?C. Gentle pump-overs and manual punch-downs are tailored to daily needs. Malolactic fermentation takes place in French oak vats.
Aging extends over 12 months in American and French oak barrels, followed by 6 months in large wooden vats for natural stabilization. Finally, the wine rests in bottle, refining itself.
With a deep cherry-red color and violet hues, this medium-bodied wine displays on the nose fruity notes of licorice and red berries, framed by elegant oak. On the palate, it is unctuous, with sweet, rounded tannins, harmonious and persistent, ready to enjoy, and continues to improve in the bottle.
