This wine comes from the selection of the finest grapes from our Escarza vineyard, and only in exceptional years. Our vines are located on the southern slope of the Obarenes Mountains, in clay-limestone soil, between 500 and 700 meters in altitude, with a north-south orientation. They are trellised, with a planting density of 3,200 vines per hectare, and cultivated dry-farmed.
Numerous green pruning tasks are carried out, such as shoot thinning, sucker removal, leaf stripping, and cluster thinning, always seeking maximum sun and wind exposure, improving the microclimate around the cluster, and adjusting yield to meet quality standards.

In a patient and meticulous process, alcoholic fermentation unfolds over 12 days, while maceration with the skins continues for 17 days, allowing every drop to be infused with essence. The temperature is carefully controlled, never exceeding 22?C, to ensure perfect harmony.
With gentle pump-overs and delicate stirring, along with manual punch-downs adapted to daily needs, the must evolves slowly. Then, like a ritual, it is transferred to new French oak barrels, where malolactic fermentation finds its home.
For six months, bat?nnage is performed every two days, embracing the wine until fermentation completes, delivering a wine of unique soul and character.
Aging was carried out for 18 months in French oak barrels, of which 8 months were in new barrels, 5 months in one-year-old barrels, and 5 more months in two-year-old barrels. A barrel-by-barrel selection is then made, followed by 6 months of rest in tank, where natural clarification through decanting takes place. Once completed, the wine enters a bottle-aging period of at least 15 months.
This Graciano is intensely ruby-colored, with great depth and a highly expressive, refined, and elegant nose. Ripe black fruit, aromatic herbs, and mint are well integrated with oak notes, smoky and mineral touches. Powerful, with excellent balance between acidity and alcohol, silky tannins, and a long, lingering finish. A very elegant wine with a wild edge.
